I needed to have a health-food day. As much as I love oxtail and duck, after several days of heavy eating, my body was craving clean flavors and greens.
Why does kale always make me feel so healthy?
I sliced my kale into ribbons and mixed it with a sesame-soy dressing, fresh ginger, garlic and meyer lemon. Let sit for about 10 minutes so the kale becomes tender. You can also heat your dressing a bit to help wilt the kale.
Finish with carrot ribbons, meyer lemon zest and chili flakes.
For the quinoa: I toasted my quinoa in a skillet to get a nutty flavor. On the side I boiled water with 1/2 clove garlic, ginger slices, 1/2 Meyer lemon, honey and steeped my green tea bag. Allow to sit 5 minutes to infuse flavor. Strain the mixture, bring to a boil and add quinoa. reduce to a simmer, cover 10-12 minutes until the water is fully absorbed. Rest the quinoa a few minutes and then fluff.
I mixed my quinoa with edamame, smoked almonds, browned mushrooms and shallots.
Teriyaki Tofu slices to round out this protein packed meal. I have to say…I just mixed this all together to eat it. I loved the Asain flavors, and textures on this plate.
I tired to be “healthy” for dessert…but eventually… I found my way into the chip bag and chocolate stash for a late night snack.
