I’m a conscience carnivore. I do not eat meat often (I prefer fish), so when I do I say: “Go big, or go home!” I talk to the folks in the Meat Department and try to make an educated decision before selecting my protein of choice. One of my favorite cuts of meat for a single-serve gal like me is a beef tenderloin steak. (1-inch thick about 6oz) This satisfied my beef craving.
Seared Tenderloin Steak with Red Wine Sauce and Parsley Oil. Meyer Lemon-Salted Roasted Potatoes. Steamed Asparagus drizzled with Olive Oil. Bordeaux.
I used Bordeux, Beef Stock, Shallot, Butter, Thyme, Carrots and Bay Leaf to make a red wine sauce to spoon over the meat. It wasn’t the proper consistency so I spooned it over the meat after it was finished resting just to give it some flavor. I finished my plate with leftover parsley oil—my new found, bright green love. The buttery texture with the pop of parsley is so good! I think I will post how to make it soon

These potatoes were my favorite little bites of goodness. Sometimes I feel pathetic buying $0.50 worth of baby potatoes at the grocery store for my one-person side dish (I hate to waste so just buy what I need for my vision haha). When I tasted my concoction, I gave myself a pat on the back the flavor was HUGE and went extremely well with the steak. To make this side dish, I quartered 2 baby white and 2 baby red potatoes and tossed them with kosher salt, cracked black pepper, olive oil and fresh thyme. I roasted them for about 30 minutes at 400 until they were yummy looking. When they were still hot I tossed them with a combination of meyer lemon zest of flaky kosher salt. Holy yum Meyer Lemons are so worth it! Can I move to California so I can grow my own tree? Please!!!?!?!
I wish I had something red on the palate. Next time I will roast cherry tomatoes to go with the asparagus. Truffle stole a piece of meat right off the plate! She was purring so loudly I could hardly hear myself thing. I like my meat fairly rare with a nice crust, so I think that attracted here even more.

I too, don’t eat red meat often, but when I do, I want it to be the perfect cut, and with a bordeaux wine sauce like you made. I want to live in CA for Meyer lemons also!
