I’m on a panini kick. I rarely enjoy sandwiches for dinner, however; recently all I seem to crave at the end of the day is hearty bakery bread and melted, full-flavored cheese.
The Downside: I have expensive bread, cheese and wine habits.
The Upside: I never shop for new clothes, shoes or fancy things.
It all works out.
Miche Sourdough, Goat Cheese, 5-year Gouda, Caramelized Cipollini Onions, Roasted Red Pepper, Roasted Eggpland and Baby Spinach. Mixed Green Salad with Basil Oil and Fig Balsamic. Sancerre.
Not QUITE as good as my ham and goat cheese with fig-onion compote on ciabatta, but I do love me some 5-year gouda. mmm still thinking of that panini.
This particular Gouda is a 5-year from Holland. It’s unlike anything you’ve ever tried. It has the consistency of Parmesan, nutty and delicious. You get a little crunch from the salt crystals in every bite, yet this cheese has a sweet almost caramel flavor. The best way to eat this is just to “fleck” it off and eat chunks. Although, I would enjoy this with chocolate as a dessert course. I thought it would add a nice surprise to some creamy goat cheese, and smokey roasted vegetables.
I topped two slices of miche with goat cheese and slivers gouda.
Topped with cipollini onions and roasted red pepper strips.
Slices of roasted eggplant.
Clean and fresh baby spinach.
Panini-o-matic!
Crunchy. Melty. Yummy. Maybe I’ll eat a real dinner again one day. But for now, I’m in an exclusive relationship with my panini machine.

Oh my, this looks even better than the last one.
