Old Fashioned Pumpkin Pie

Thanksgiving is tomorrow. Are you prepared? Of course you are! How silly of me to even ask. If for some odd reason you find yourself in need of a last minute dessert for your Thanksgiving table, I have an easy pumpkin pie recipe that uses ingredients you probably have on hand at home.

Old Fashioned Pumpkin Pie

(Serves 6-8)

  • 1 Recipe for Basic Pie Crust (or store bought, however; I recommend making your own for extra yummy goodness.)
  • 3 large eggs
  • 2 cups pumpkin puree
  • 1/2 heavy cream
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/8 tsp cloves
  • 1/2 tsp salt
  1. Preheat oven at 375 and lightly coat a 9-inch pie dish with non-stick cooking spray.
  2. On a lightly floured surface roll out pastry dough. Place in pie dish and freeze for at least 30 minutes
  3. Lightly whisk eggs.
  4. Stir in remaining ingredients.
  5. Pour into set pie shell and bake 45-55 minutes until the center is set and dough is a golden color.
  6. The center will look a little gooey but I assure you, it is done. Stick a knife in about 1-inch from the crust if you aren’t 100% certain. Allow to cool completely on a wired rack before serving.
  7. Serve with real whipped cream (1 cup heavy cream, 1 TBS sugar, 1 tsp vanilla extract)Pumpkin Pie and Vanilla Whipped Cream. Just two of the many foods I am thankful for.
