Here We Go

Hello Monday. Here we go again! I struggled to get out of my bed this morning, exclaiming to Truffle “I’ve fallen into a sea of comforter and can’t get up!” as she meowed in my face for food. I desperately wanted just a few more minutes of pillow time, however; breakfast called. I didn’t rush the heat on my oats today (sometimes I turn the heat up to make them cook faster and they can get gummy) and came out perfectly. A kitchen success is my favorite way to start the week.1/2 cup old fashioned rolled oats cooked in 1/2 cup vanilla soy milk, 1 cup of water, cinnamon, cloves, pumpkin pie spice, 1/2 banana, 1 TBS chia seeds, 1 TBS crunchy PB, Crofter’s Europe Superfruit Spread and honey.

I swear, not a day goes by where I don’t have peanut butter and jelly in some form. If I don’t have the dynamic duo at breakfast I almost always have it for lunch or as a snack. Three cheers for PB&J!Whole wheat tortilla, hummus, sprouts, spinach, tomato, kalamata olives and goat cheese. Apple.

I ran out of bread! I know, I know–but I have plans for a special bread purchase tonight :) . I am far too lazy to eat/pack a salad for lunch, so I was happy to find tortillas in my fridge. I piled mine high and struggled to close it. It should be a yummy change to my lunch box.Dinner tonight shall feature this lovely Golden Acorn Squash. I just had breakfast and I’m already excited about dinner. Is that wrong? Well, if it isn’t than I don’t want to be right!
