Guinness Brownies

Beer and Chocolate? Yes please!Who wants to cook with me? We can even dust these bad boys with some confectioners sugar to be fancy!YAY! I’m glad you want to make these! Let’s get cookin’!Gather your ingredients.Now I warn you, sometimes I play by my own rules in the kitchen. I didn’t have the 2-4oz bars of bitter sweet chocolate that the recipe called for, and discovered that the bag of chips was cheaper, therefore; I measured  about 1 cup bitter sweet chocolate chips. Now, you have to melt them with white chips and butter in a double boiler. I don’t have a double boiler and I don’t have a glass bowl. My solution:Put the glass measuring cup in a sauce pan of shallow simmering water (lowest heat possible)and keep a close eye on it so the chocolate doesn’t burn. Stir constantly until it looks like silk and you have the urge to dive in.Beat the eggs and sugar until light and fluffy, about 3 minutes.Add the chocolate and mix away! At this point I fell in love with my hand mixer. It made the mixture velvety and smooth.In a separate bowl whisk together the cocoa powder, flour, baking powder and salt.Slowly add the dry ingredients into the wet ingredients. PLEASE, PLEASE do this slowly. If you don’t, I promise you will have a flour coated kitchen, and that clean up is never fun.Now for the fun part. Add the booze. This should be at room temp, and if possible try not to have too much foam. This will make the batter look rather thin but fear not! All shall be okay! Mix in about 1/2 cup semi-sweet chocolate chips and pour the batter into a greased baking dish.Add some mini semi-sweet chips to the top and bake away!They come out a little cake like and dense from the carbonation yet…oh so rich! The stout intensifies the chocolate immensely. You can taste a hint of the beer but not in a bad way. I loved these. I think next time I’m going to make Guinness cake!

Guinness Brownies (cut my way it made about 24)

  • 8 oz bitter sweet chocolate, chopped.
  • 1/2 cup white chocolate chips
  • 6 TBS butter, cubed
  • 1 cup all purpose flour
  • 3/4 cup unsweetened cocoa powder (I used Hershey)
  • pinch of salt
  • 4 eggs
  • 1 cup sugar
  • 1 1/4 cup Extra Stout Guinness
  • 1/2-3/4 cup semi sweet chocolate chips
  • Confectioners sugar for dusting
  1. Preheat Oven to 375 and grease a 9×13 inch glass baking dish.
  2. Over a double broiler, melt the bittersweet chocolate, white chocolate and butter, constantly stirring until smooth. Remove from heat.
  3. Beat eggs and sugar about 3 minutes until fluffy. Add the melted chocolate and mix until smooth.
  4. In a separate bowl, whisk together the flour, cocoa powder and salt. Slowly add this to the wet ingredients.
  5. Whisk in the Guinness until incorporated. Stir in semisweet chips. Pour into the baking dish.
  6. Garnish with more chocolate chips if you wish and bake for about 25 minutes or until a knife comes out clean.
  7. Allow to cool completely and garnish with powder.

Beer or no beer, scratch brownies always taste best :) .

  1. I made the mistake of mixing my dry ingredients into the wet ones too quickly yesterday when making a chocolate cake for my friend’s birthday. I got the dry mixture all over the counter and on me. :P
