Chicken Florentine Meatballs

Chicken Florentine Meatballs with Homemade Tomato-Mushroom Sauce and Spaghetti Squash. Last of my A to Z Pinot Noir.

I used the fact that I ran out of paper towel to justify a trip to the grocery store.  I am fairly confident that I can not do a “necessities only”  grocery store trip. I go in for paper towels, I come out with ground chicken and spaghetti squash. What can I say? I need variety in my life. Leftovers simply would not do tonight. I had large button mushrooms that needed to be used and a hankering for tomato sauce and Parmesan cheese. Naturally this would be my creation of choice. Random but so delicious.It occurred to me when I got home that I have never actually made meatballs. I’ve read a gazillon recipes and my mom made them often when I was younger. How hard could they be? I decided to stray from the traditional ground beef and use chicken. These meatballs were baked and beyond moist. Don’t worry, I gave myself a pat on the back for a job well done.5-minute tomato-mushroom sauce with baked chicken Florentine meatballs. Would you believe that I made this all in about a half-hour?
