Homemade Pumpkin Butter

It’s pumpkin season!!! :) I am one happy girl. I love pumpkin everything—pie, muffins, coffee, biscotti, cookies, yogurt, ice cream, beer–you name it, I’ve probably tried it. I’ve always wanted to make pumpkin butter. It is like pumpkin pie in a jar. Who wouldn’t want to top everything and anything with a little pumpkin pie? Unfortunately, this yummy goodness is about $4 for a tiny jar! I decided to take matters into my own hands. It all starts with a sugar pumpkin.Clean and cut the pumpkin in half and scoop out the seeds and stringy bits.  Place it cut side down in a baking dish and add about 1/4 inch of water. Roast for about 45-60minutes at 350 degrees.Allow the pumpkin to slightly cool and mash it  a medium sauce pan. Add 1 cup of sugar, 3/4 cup pure apple juice (or apple cider) 1/2 tsp nutmeg, 1/2 tsp cloves, 1 tsp pumpkin pie spice, 2 tsp cinnamon. Give or take these measurements. My pumpkin butter had WAY more cloves and cinnamon because that is how I like it. Spice is nice :) . I love making things myself because I can adjust to my taste. Bring to a boil and lower the heat to a simmer 30 minutes until nice and thick, stirring frequently.It’s a thing of beauty, really.You should probably bake muffins and serve them with Greek Yogurt, Banana and Pumpkin Butter for the occasion. Your body and soul will thank you.

    I am making this on Saturday! I love pumpkin butter, but it is so expensive at my grocery store too! And buying a jar is not nearly as fun as taking the time to make your own. This would be lovely on a fresh slice of Honey Whole Wheat Bread..or on a spice muffin. I’m excited, Nora!

  7. I’m so making this pumpkin butter! I made those pumpkin oat pancakes for breakfast this morning and the were PERFECT!!! you’re brilliant, miss. lol. I’ll let you know how the pumpkin butter turns out!!
