Dinner tonight was leftovers. Typically I dislike leftovers. I love cooking and they deprive me of the opportunity to make something new. Even though I feel this way, just look at that plate. How could I say no? Cornbread was the perfect vessel for the gravy formed by my chicken and andouille etouffee. For some green goodness, I decided to have a side of sauteed kale again. It was delicious last night, and quite frankly, I could probably eat 4 plates of this.
After a 3-day weekend I knew that today would be a busy work day. No time to eat a salad or leftovers for lunch. I decided that a quick sandwich was the way to go with a side of delicious sweet honeydew melon.
Toasted Whole Wheat Bread with Goat Cheese, Arugula, English Cucumber and Strawberries. Lot’s of honeydew melon.
It’s time to officially declare it hot oatmeal season. I hope I am not jumping the gun on this. I love the comfort of a hot bowl of banana oatmeal with nut butter and berries. The only word to describe this breakfast is magical. I can’t think of a better way to start the day. Full, focused and happy.
1/3 cup instant oats, 1/3 cup vanilla soy milk, 1/3 cup water, 1/2 TBS chia seeds, cinnamon, 1/2 banana, blackberries, heaping TBS of almond butter, golden raisins.
I usually use a mix of instant oats and rolled oats for a creamy and hearty bite. Today I used all instant and was SO disappointed. They were gummy and too creamy. I love the chewy density of rolled oats. Tomorrow I’m thinking of a 1/3 rolled, 2 TBS instant combination. Side Note: If I have oat bran I prefer that to instant
. It makes my oatmeal voluminous.
It’s time for Glee and…..ice cream? I can’t decide on what to have for dessert but need some cool sweetness.

I’ve never tried using rolled oats for my hot oatmeal – do you have to cook it for longer when you use them instead of quick oats?
I love Glee! Did the new season start already? Did I miss it!? My other favourite shows are Gossip Girl and Bones.
I checked out that link for the etouffee you made and I’m so making that the second I start to feel a chill in the air. It looks so good!!!! I love cajun/creole stuff. It’d probably be really tasty with shrimp too. YUM! Also, in regards to the favorite tv shows – I’m addicted to True Blood and Dexter…and Man vs. Food!!!
