Leftovers Made-over: Chicken Bake with Homemade San Marzano Sauce, Spinach and Parmesan Cheese. Roasted Acorn Squash.
I needed to finish off my roasted chicken before the weekend. This was a nice way to use it up! I justified my wine splurge based on the fact that I was having leftovers for dinner. 
Truffle approved.
