How is it already September? And more importantly, where did Summer go? Although the Fall is quickly approaching, the hot Summer temperatures have been relentless the past few days. It was another 90 degree, humid day and all I wanted was a quick and easy dinner. I also really, REALLY wanted figs.
I don’t ask questions, I just honor my cravings. I loved the concentrated sweetness of the Black Mission Figs along side the salty Chicken-Spinach-Feta Sausage and the cool and crunchy cucumber and green beans. Peppery arugula provided a hearty bite that mellowed the intense flavors. I loved this dish. It was light, elegant and satisfying. Next time I plan to add walnuts for a buttery feel and crunch. I also really wish I had a nice light pinot grigio, sauvignon blanc or a rose wine for this. Darn.

What is the most unique salad you’ve ever had?
I’ve still never had a fresh fig! I know, it’s insanity! I see them at the grocery store and I want to buy them so badly but I never really know what to do with them. Now I do. This looks so good! I can’t wait to try it
I have been in a fig and goat cheese mood and this just sealed the deal. A nice pinot grigio woud be great with it! yummm.

I knew when I saw “Figlicious” as your title I couldn’t put off reading! Fresh figs are so elusive around here – and I am just SO curious as to how they taste! They’re sort of a peculiar dried fruit, so I’ve been wondering how the fresh ones compare. Either way – I bet it was great in this salad!
