Truffles for Truffle

Yesterday I made Dark Chocolate Truffles, to honor my new little friend.Cocoa Dusted, Walnut Rolled and Peanut Rolled. Drool.She loves the kitchen, but her curiosity is dangerous. Hot stoves and toasters mean nothing to her and she’ll gladly walk all over them. Luckily truffles are easy to make so she wasn’t banned for too long. LET’S GET COOKING!The Line Up (makes about 10 TBS sized): 1- 4oz bar of good quality bitter sweet dark chocolate, 1/4 cup of heavy cream, a pinch of cayenne and cinnamon, 1/2 tsp vanilla. Chop your chocolate. If some happens to melt on your hand, go ahead, lick it. You know you want to.In a small sauce pan add 1/4 cup heavy cream.
1/2 tsp vanilla extract.And a pinch of cinnamon and cayenne. Don’t be afraid, the cayenne doesn’t add heat to these, just a bit of warmth ;) . Whisk it all together and on a low heat bring to a simmer.In a medium bowl, pour the hot cream over the chocolate and stir to melt.I know….I know. Place it in the refrigerator for about an hour until it is solid. Using a melon baller or TBS measure, scoop out rounded balls of chocolate. Yep. It really is that easy. Roll in chopped nuts or dust with cocoa.

And for my mom…some pictures of Truffle the cat. I took over 30 but she is too quick!Like lightening she leaps from the chair to the counter top. How she snakes her way up to the chair is a mystery to me.The only not blurry picture I could get. She was intrigued by the bubbles in my drink. She didn’t even blink!
