I Trussed a Chicken

As the end of August creeps near, I have Fall on my mind. Roasting, slow cooking, squash…OH, squash. I love  hearty, warm, soul soothing foods in chilly weather. Even though it was nearly 80 degrees today, now that I have a functioning oven and a CLEAN KITCHEN I decided to attempt my first ever roasted chicken. Rosemary-Thyme Roasted Chicken Breast, Roasted Acorn Squash with Pumpkin Seed Oil, Steamed Green Beans.Stuffed with whole sprigs of rosemary, thyme and lemon. My apartment smelled like heaven on earth.

For my first “real meal” I splurged on a bottle of Kendall Jackson Pinot Noir.For dessert I had all of the fixings for a pie, brownies, cookies…the works! I couldn’t decide what I should make. The options were endless! After browsing my cook books and cooking websites, I decided that for my first apartment dessert I should honor my cat. I made dark chocolate truffles.Cocoa Dusted, Walnut Rolled and Peanut Rolled.

I had a peanut coated truffle with a splash more pinot noir. Chocolate and wine…DIVINE!

I roasted a 4 pound chicken for one person… this will be a fun week of “lifting up leftovers”. Not to mention I have other non-chicken dishes planned. I love having a functioning kitchen. I wish I could cook all day. Actually, I would cook all day if I could pay the rent!

    That chicken looks amazing. Roasting a whole chicken totally intimidates me for some reason!!

    I loveng rosting chicken. I have some amazing herbs de provence that I use to season it. They litterall are from provence. Love it!!
    Can’t wait for fall soups. Any and everything. Pumpking, butternut squash, chili, etc.

      Hey Lindsay—WHOA!? You have herbs de provence from Provence? I am beyond jealous. I love the flavor, it reminds me of Thanksgiving. I love fall soups. I made a few last year that are engraved in my mind. Butternut Squash/Apple/Curry; My Mom’s Chili; and Butternut Squash/Black Bean and Kale Soup. Can’t wait to share recipes this fall :) And…wine to pair!

  6. That chicken looks lovely! For me, fall is ALL about the butternut squash! And spaghetti squash too I suppose, but butternut is my absolute favourite!

    Awe that is so exciting! A new apartment :) The truffles look amazing..now I want chocolate!

    For fall, it’s sweet potato and butternut squash all the way – they’re a close tie, but sweet potato usually wins my heart :)

      I think I love the kitchen more than ours haha! The prep/clean up is so easy…and I don’t even have a dish washer! I’m going to have to roast you a chicken one day. The flavor from stuffing it with herbs and lemon was unreal and so juicy! The truffles were good—I knew the peanut would be my favorite. I used Ghirardelli 60% bitter sweet and with wine it was phenomenal! Truffle is…curious. I have to keep fetching her away from the kitchen. She climbs on the counter and…on the toaster. I am afraid she’s going to get in trouble one of these days.

        Our kitchen is the pits. Original from 1958, The layout is awful for modern appliances and it was built for only one cook-the wife in a shirtwaist dress and apron.
