While the kitten slept last night, I was wide awake. I felt like a new mom. I was terrified that something was going to happen as soon as I shut my eyes. I also wanted to get a few things out of the way so that when she is awake I can devote all of my attention to her. This meant packing for the move and making breakfast and lunch late into the evening.
Overnight Oats: 1/3 cup oats, 1/2 TBS Chia Seeds, 1/2 Banana, 1/3 Cup Vanilla Soy Milk, 1/3 Cup 2% Fage Plain Greek Yogurt, Cinnamon, Blueberries, Honey, Granola and White Chocolate Wonderful.
As the title indicates, this is WONDERFUL! The flavor and texture reminded me of peanut butter frosting. I’d top a brownie with this, no problem

I guess I made TWO unexpected purchases yesterday. I have never seen this product in my grocery store and I HAD to try it out! My nut butter collection is currently in the 6-7 open jar range. Is that bad?
Lunch is another whole wheat pita sandwich.
Whole Wheat Pita spread with Plain Hummus, Grainy Dijon, Farmer’s Market Lettuce, English Cucumber, Red Bell Pepper, Tomato Slices (on side will be added) and Watermelon on the Side.
Tricks for a ‘non-soggy’ sandwich:
1. Toast the bread! I stick the entire pita in the toaster. It will puff up and looks scary. Cut the edge to release the steam and wait until it is cool.
2. Spread both sides of the bread with a stable surface. I used hummus, but peanut butter, mayo and butter are “sealers” so other elements don’t leak through. If I do PB& J I always spread both sides with PB before the J.
3. Pack juicy elements to add later. Some times I pack everything separately and assemble when I’m ready to eat, but that can be a fuss.

I’m not a cat person typically, but that kitten is just adorable. What a treat to have that cute little fuzzball to play with.
I often do that with sandwiches too, or I’ll make sure the juicier fillings are wedged between hummus and cheese, so it doesn’t get soggy.

oh yes, the joys of being a new “mom”. They grow up so fast, hehe.
i know the feeling – when we got kaia as a puppy, she slept on my bed and i was terrified i would roll over and crush her, or she would get lost or trapped somewhere or something. sort of far fetched…but hey. haha. of ocurse, it ended up being that she woke up and was the one trying to play with my feet whenever they moved :X
i love your sandwich tips, too. i do the same!! and even if you can’t pack juicy stuff like tomatoes separate, “lining” the bread with lettuce first works, too
