Sunday Distance Run

1/2 cup rolled oats cooked in 1/2 cup vanilla soy milk, 1/2 cup water, cinnamon and vanilla extract. Topped with 1 peach, blueberries, walnuts, ~1/4 cup Greek Yogurt and honey.

My dad and I have been running with a group every Sunday morning for the past few weeks. This also means running a little bit more. Last weekend I ran 11.1 miles and was dead. I needed Mexican food and beer to save me. Today we ran about 8.75 miles, which was a much more comfortable distance. Before I left I had a standard slice of toast with almond butter. I was searching for a banana but we were out :( . When I got home I dove into the kitchen to create arguably the biggest bowl of oatmeal ever. I was hungry and needed some serious protein. I also couldn’t decide if I was in the mood for hot or cold, so I combined both elements into one. The base is creamy hot oatmeal and the top is cold fruit, Greek Yogurt, nuts and honey. It was delightful and super filling.

Planning to do a few “make ahead meals” for the week before heading back to my apartment. The weather is predicting heat so I am going to do everything in my power to stay out of the kitchen. I have some Indian food in mind :) .

  1. At first I thought the yogurt on top was whipped cream! Wouldn’t that be an awesome oats topper? ;)

    I just found your blog and thought I’d read though a bit, esp since you’re from upstate NY (so am I but now live outside of Boston). I just started a blog and it’s a mix of healthy living, food, fitness and other things I love. Also included is my training for my first marathon coming up in Oct – so this post caught my eye as Sunday (today) was my long run too (12 miles, ugh). Good luck with your running group w/your dad, how fun!
