On the Road Again

I never want my weekends to end. I stayed home last night and woke up early to travel back. The 5am wake-call was a harsh reality to face, however; the company of my parents, beer and Mexican food were worth staying for yesterday. No regrets. An early day on the road required preparations. Last night I made overnight oats for breakfast and packed a Farmer’s Market Lunch.Overnight Oats: 1/2 cup Rolled Oats, 1/2 cup Vanilla Soy Milk, 1/2 cup Greek Yogurt, 1/2  Banana, Cinnamon, Vanilla Extract, handful of Blueberries and Natural Crunchy Peanut Butter.

Farmer’s Market Salad: Bibb and Red Leaf Lettuce, Cucumber, Tomato, Heirloom Beans, Walnuts, Goat Cheese. Olive Oil/Balsamic. 8-Grain 3-Seed Toast with Raspberry Jam.

I am going to miss the comforts of fresh food this week. I don’t even want to know what happened to the food in my broken refrigerator over the weekend. A trip to the grocery store is necessary, however; I do not want things to spoil…hmmm. Decisions, decisions. To make food or to take food, that is the question. Whether tis nobler…okay enough. Dinner will be interesting.

  1. I had so many issues when I lived at Miami of Ohio with my fridge, mainly the power always went out. Annoying!

    I try to go shopping once a week, b/c I have been spending way too much money with several spontaneous trips.

    I go to the grocery store at least every other day (I’m trying to cut back a bit though) I love taking small trips and getting inspired by what looks the freshest (and by what’s on sale!) I can’t wait until your fridge problem gets fixed…poor girl!

  4. Ha! I attempt to make one large grocery trip, but I always go back a couple times for something I didn’t think of, or because we run out of something else. Booo.

    I think I go to at least one grocery store a day. I will inevitably run in for one thing and come out with 5+. That’s ok though, it’s really the only kind of shopping I like to do. I know, I seem to be missing a female chromosome or something. ;-)

  6. Sorry you’re still having food/fridge issues :( I bet you’re so very grateful for your lovely parents, though! It seems they always have such good food on hand – if I didn’t live here, I don’t think my mom would have oatmeal and oatmeal necessities on hand :P
    I hope too much didn’t spoil at home and you were able to pull something together!
    Shopping-wise, I try to make one big trip…but it always turns into two mini-trips. I seem to be on a weird schedule in which I run out of milk and yogurt before I run out of produce?
