Tarragon Chicken Salad

My favorite meals are uncomplicated and full of flavor. I’m always surprised how a few really good quality items can make a dish feel elegant and complex. For lunch today I made a Tarragon Chicken Salad Sandwich on Pecan Raisin Sourdough Bread. This sounds fancy but check out the ingredients:

Tarragon Chicken Salad (for one): Cubed Pre-Cooked Chicken Breast, 1/2 stalk celery, ~1 TBS finely chopped tarragon leaves, juice of 1/4 of a lemon, 1 heaping spoonful of Chobani Plain Greek Yogurt.

    Oh my does that chicken salad look heavenly. I love the addition of tarragon. I added that to my potato salad yesterday and it was such a nice surprise when I got a bite with tarragon in it.

    Favorite sandwich filling: goat cheese, roasted squash and eggplant, capers and arugula.

  2. I love a good turkey, tomato, avocado and lettuce sandwich!

  3. I love a good chicken salad, and definitely use greek yogurt over mayo.
