Oat Trophy

I heard a knock on my door this morning, “Nora….want to run to the high-school with me?” It was my dad. Without hesitation I screamed YES and was ready in five minutes. I was planning on going for a quick run down the street before heading back to my apartment but to me, there is nothing better than running with my dad and running on a high-school track. I love the scenery of the country side but the rubbery track makes me feel light and quick. I sometimes wish I joined the track team in high-school instead of the swim team.

I fueled up with half of a cold banana and sipped on water before we left. It was a hot 4.75 mile run and I could hear my water bottle calling to me from home. I also had a big bowl of overnight oats waiting for me and I could not wait to dig in.

Victory Oat Bowl:

Overnight: 1/2 cup rolled oats, 1/2 cup vanilla soy milk, 1/2 banana and cinnamon

Morning: 1/4 cup Greek Yogurt, lots of blueberries, ~1.5 TBS chopped mixed nuts, a big drizzle of Farmer’s Market Wildflower Honey.

Cool, creamy carbs….mmmmm. This was the ultimate trophy for a killer run!

    Blueberries are so good in cold cereal! Although, I agree, they make a mean compliment to hot oats! :)

  2. That’s awesome that you have your dad as a workout buddy! I wish I could get mine out on a run with me. :P

    I love my blueberries with yogurt and cereal. I like to get their full flavour, and I find their taste sometimes gets masked in muffins and pancakes.

    My favorite blueberry dish is blueberry buckle. I tried Martha Stewart’s recipe which is delicious but last season I found one in the newspaper which had less calories and was equally delicious. I’ll have to find it for you. The market should have blueberries tomorrow. We’re having a heatwave so stay cool. Love, Mom

    Blueberry cobbler, all the way. It’s one of the few baked desserts that I can make well, and it’s so delicious too.

    I have to say…I love blueberry muffins. They may not be the healthiest use of the antioxident packed fruit, but they are so so good! Especially with a tall cup of coffee and a crossword puzzle.

    And the oats DO look delicious! I also practically fantasize about cold water and some sort of food after working/riding/running/whatever in the hot sun. Need a camel back or something! haha.
    I adore blueberries in any way, shape, or form. Blueberry pancakes, muffins, oats, plain…check, check, and check!
