Tempeh Waldorf  Salad

Bear with me this is WAY better tasting than it appears.

I’ve never featured this combination on my blog before but it is one of my favorites. I usually throw it on top of a quick boring salad but it also makes for one heck of a sandwich. What is it you ask? Crumbled Soy boy 5-grain tempeh, goat cheese and Crofters North American Superfruit Spread. Today I added celery and chopped cherries to the mix to give it a “Chicken Walforf” feel.

Bizarre Lunch Box:

Sandwich: Whole Wheat Bread, Spinach, Clover Sprouts and Tempeh Waldorf (1/3 block Soy Boy 5-grain tempeh mashed with goat cheese, Crofter’s Superfruit Spread, Celery and Cherries.)

Sides: 2 large carrots, empire apple.

What are some of your favorite ways to use non-meat proteins?

**Note: I am not a vegetarian, I just like products such as tofu and tempeh. They are versatile and easy to prepare. A perfect protein source for a single girl on the go :) .**

    Like you, I’m not vegetarian, but I adore tempeh, and tofu. Your “waldorf” salad sounds delicious and I may just give that a go this weekend. I love grilled tofu with gorgonzola and dried cranberries.
