Back to Basics: Stove Top Oats

I haven’t had my beloved stove top oats in a few days, and oh how I have missed them! There is nothing better than a bowl of creamy, luscious and hearty oats to start the day off right. I can honestly say that no other breakfast satisfies me the way oatmeal with fruit and nut butter does. Be still my heart.

I wanted to thank Kristen at POM Wonderful for contacting me and sending me some bottles of POM juice to test out. I will use the juice in much more creative ways, but I HAD to incorporate POM into my oats as my first cooking endeavor. Breakfast today was: Banana Oats with Almond Butter and Mango-Blueberry Pomegranate Sauce.

The Base: 1/3 cup unsweetened almond milk, 1/3 cup water, cinnamon, nutmeg, vanilla extract, 1/2 sliced banana, 1/3 cup rolled oats, 1/2 TBS chia seeds. Bring everything up to banana up to a simmer, add oats and seeds, cook for ~8 minutes “whipping” banana at the end.

Mango-Blueberry POM sauce: In a small sauce pan combine blueberries, mango and cinnamon. Add POM to coat, simmer and stir until slightly reduced.

I also added 1 TBS of Almond Butter directly to the center and poured the warm sauce over it. YUM! I’m also thinking OIAJ (oats in a jar) might be necessary tomorrow, based on the condition of my almond butter jar. Happy Friday to me :) !

    I love Pom in my oats! I’ve used my Pom in my pancakes (awesome) and quite a bit of it has gone into my smoothies. I still have a few bottles left and I need to come up with something awesome for it.

  4. Oh wow- pom sauce looks so delicious! I bet that is such an amazing addition to the oats!
    And I have never really used pomegranate before! I think I’m missing out. And you’re right- bfast is the most important meal of the day!

    1. It’s totally worth the extra time! Plus then I have a few minutes to clean/ pack lunch if I am taking lunch to campus that day! I’m all about multitasking!

    I thought you might start the day with something orange!!! Go ‘Cuse!!! The “Sweet 16″ starts at 7:00 any thoughts on sweets? M&Ms chocolate covered almonds in Easter colors? (I couldn’t find orange)

    1. Mango’s are orange ish! Hmm sweets that are orange… I would have to go with CARROT CAKE! Pumpkin ice cream with chocolate almonds/ pumpkin pie. Apricot/Peach tart. If you are looking for some type of candy MM’s might be the way to go or jelly beans!

    I made a really great salad dressing last week I found at the POM site! Definitely recommend it. Can’t remember what it was called but it had dijon mustard and honey and POM! Soo good!

  9. I had oats with blueberry sauce today – kinda similar!
    I never really use pomegranate though…the seeds annoy me :/
