So Fresh and So GREEN!

Are you shocked by the color of this drink? Don’t let the color intimidate you, the taste more than makes up for it. I have been wanting to try a fresh vegetable/fruit juice for a while now, but always end up with a fruit smoothie instead. After a long day of studying, I decided to go to my yoga studio for a much needed Vinyasa class. My body was craving some stretching after sitting in a chair for the entire day, and beginning to feel a bit stiff after taking a few weeks off. The studio has a juice bar and organic kitchen (I seriously want to own one some day.) attached to it so I decided to get a refreshing pick-me-up after class. I wasn’t in the mood for anything too heavy since I had a late lunch and it was almost dinner time. I decided that today would be the perfect day to try the “Green ‘n Lean“: Apple, Kale, Parsley, Celery, Lemon. It was SO refreshing! I could really taste the parsley, celery and lemon which are very ‘clean’ flavors. This drink reminded me of an upscale lemonade, and it may have inspired me to buy a juicer this summer. I always find that fruit juice tastes the best when it is straight from the source, but would never thought to incorporate vegetables. It put me in such good spirits that I decided to make something equally refreshing for dinner: Pan-seared Mahi-Mahi with Mango-Passionfruit Compote on a bed of Spinach.This is the same compote that I made for my oats on Saturday, and I thought it would go wonderfully with the meaty Mahi-Mahi. Again, I diced 1/4 of a mango, sautéed it with cinnamon, added orange juice to coat, added ~2TBS Crofters Asia Superfruit Spread, brought it all to a simmer and let it reduce until it became a thick consistency. It was sweet and tart; a nice addition to the lightly peppered fish and spinach.

  1. The juice looks awesome! I love how fresh and bright it is! But the mahi mahi looks even better- amazing meal!! I’m loving the passionfruit!

  4. Wow that looks delicious! You cook some fab stuff :D
    I’ve never really tried vegetable juices (at least not homemade- there’s a wonderful carrot juice kicking around the stores over here, which is blended with 6 other fruits and veggies – it’s amaze!) – lemon/celery/kale sounds very very scary to me…I HATE celery!

  5. It’s so vibrant!! Very cool, you’re inspiring me to try one now :P I’ve never had a fresh veggie/fruit juice before. It just made my list, though!
    Dinner looks amazing, as always!! I’ve also never had mahi-mahi before, but it’s another thing I’ve been wanting to give a taste. No such thing as too much experimenting when it comes to food!!
